Staff will be 'challenge' when hospitality reopens


Local restaurateur Brian Fallon is warning that a divided reopening of hospitality could adversely hit restaurants by making it difficult to recruit staff, writes Brian Byrne.

Speaking on the Kilcullen Diary's Daily Cast, he said that if the hotels get to reopen before restaurants, as looks likely, there is the big fear that the staff who are available will be 'hoovered up' by the hotels.

"It's very difficult to get chefs at the best of times, and a lot of staff may well have left the industry and even left the country," he said. "So there will be a bit of a scramble to fill kitchen rosters when we do get the green light."

Brian is also cautious about there being any possibility of indoor dining allowed before the end of the summer. That was part of the reason he has recently invested in a bespoke Austrian large umbrella system to extend the Fallons outdoor dining capacity through the vagaries of an Irish summer.
